Best restaurants

Just came across "best restaurants" section--how about starting a new one since so many of the comments(most) go back and are mainly from June 1999--with all the traveling most of us do, this could really be a valuable help. Thanks.

Tetsuya's in Sydney, Australia

I spent an incredible four hours on the tasting menu. It was all fabulous, emphasized sea food, but I'd be happy if the squab were my last meal on earth.
