What determines whether the service on a flight is day or night?
It seems there are several possible permutations for local time at departure and arrival for long haul flights depending on flight length and whether you are going east or west:
M = morning, D = day, N = night
MD = take off morning, arrival day
MN
MM
DM
DN
DD
NM
ND
NN
How do you work out what sort of service the crew will do on each of these flights?
M = morning, D = day, N = night

Common knowledge is that it's best to switch to destination time as soon as you get on a plane. However, IME the airline always provides service according to the origin time - perhaps with second service more related to destination time if you are lucky.
