Based on the responses and information i have found online i have made the following two lists showing which airlines accept cash and which airlines don't accept cash and covering many airlines worldwide:

Accept Cash:
• Aer Lingus
• Aeroflot
• Air Baltic
• Air Greenland
• Air Malta
• Alitalia
• Atlantic Airways
• Austrian Airlines
• Easyjet
• Egypt Air
• Emirates Airlines
• Etihad Airways
• Eurowings
• Finnair
• Germania
• Gulf Air
• Jet 2
• Kuwait Airways
• LOT Polish Airlines
• Lufthansa
• Oman Air
• Qatar Airways
• Royal Air Maroc
• Royal Jordanian Airlines
• Ryanair
• Saudia
• Scandinavian Airlines
• South African Airways
• Swiss Airlines
• Wizz Air

Do Not Accept Cash:
• Air Canada
• Alaska Airlines
• Allegiant Air
• American Airlines
• British Airways
• Delta Airlines
• Frontier Airlines
• Hawaiian Airlines
• Icelandair
• Jet Blue
• Norwegian Air
• Southwest Airlines
• Spirit Airlines
• Sun Country Airlines
• United Airlines
• Virgin Atlantic
• Westjet
• Wow Air

These lists are not complete so i will keep adding more airlines to them when i find more information.

It's interesting to note that it is mainly USA and Canada based airlines that don't accept cash whilst most (but not all) of the European, Middle Eastern, Asian, African, based airlines do still accept cash. I wonder if there are even any USA and Canada based airlines that actually still accept cash.
I created a wiki.

Until you hit the 90/90 rule, others will have to update for you.

IIRC both Gol (G3) and Avianca Brazil (O6) accept cash (at least domestic -- never flew them international). The same probably applies to other Brazilian carriers.

I should probably also have added that, for the very limited paid items available ($6 beer and wine on domestics), qantas takes cash, I believe cash only

In 2017 I was on an American Eagle flight (not sure who was the actual operator) that was cash only. Was very surprised, and I wonder if this is still the case on some small regional airline affiliates.

Perhaps their cc machine reader(s) weren't working?

Doesn't the mainline's rules carry down to its regionals?

Added to the wiki.

@nancypants
Are you saying Qantas does cash only, specifically for domestic flights?

cash only for alcohol (only), outside of times above- $6 for wine or beer (kind of complicated!)
nothing else for sale

Iberia regional/air nostrum is cash and/or card. I wasn’t paying enough attention on my Iberia mainline flight so will have to feed back on that one later

Airnorth (Australia) is also cash only for the limited paid options

EDIT:
iberia mainline also accepting cash. I have added to the wiki but can’t add dot points for some reason if someone could fix- ta!

If for some reason (corporate card, card has FT fee etc) you don't want to use a CC, handing some cash to someone nearby usually works fine.

It also makes it easier to eyeball my statements if I don't swipe for every little thing.

Also if you’re travelling and your bank charges a foreign transaction fee, it’s cheaper to go get a wedge of cash out the machine and pay $2.95 for ~$500 rather than buying a $1 cookie and paying $2.95 for the foreign transaction fee

to add: vueling accepts cash
