We are looking for business class tickets YUL/FCO or YYZ/ FCO June 23 2018 return July 9 ... prices increased from 3000$ to 4500. $ in 4 days .... will it come down again or when is the optimal time to buy ? Also is 3000. $ reasonable price or we could get lower ?

It's all relative. For a nonstop during peak time it's not a bad fare when under $3500USD/person. The "alternative" nonstop is AirTransit which has a recliner business class for ~$1500/pp.
If you're willing to connect you can get ~$2100-$2800USD/pp but European domestic business class is not great.

It's too early to purchase summer 2018 tickets to Europe. If you're redeeming miles, now's the time, but if you're spending money, you might profit from waiting until after Christmas. Remember that July is not a peak demand month for expensive business travel.

Check Turkish if you want a pretty good product in the CAD$3k range and are okay with angled lie-flat. It's a true J service, and a pretty good one, just not 180-degree flat unless they're retrofitting a bunch of planes between now and then.

Check BA if you want a flat bed.

Air Transat isn't a real business class...that's more like Premium Economy. But nonstop, decent seat, decent price...could be worth considering.

Are those CAD prices or USD prices? If CAD (aka ~$2500USD) you might be able to go a little lower (2200 - 2500 CAD is probably as low as you'll see and that would be a well timed fare sale that you jump on) but 3000CAD/$2500USD isn't bad for summer.
