I am planning to fly (with chinese airline) from Paris to Jakarta (first from paris to guangzhou,china and from there to jakarta). I want to know if i need any visas or additional documents for my trip in addition to my passport. I have the Dutch passport.

The Indonesian Embassy in the Netherlands, which (as rickg523 posted) is one of the few sources of information you can trust to answer this question correctly, says in #41 on this page that you can apply for a 30-day visa on arrival and extend it once. You need a passport that is valid for at least six months after your arrival and a through or return ticket. The visa will cost USD35.
As for China, it depends on how long you plan to stay.

Most western countries are allowed a single free 30 day visa for Indonesia for leisure travel. This can not be extended, so if you do need to extend, pay the $35.

You can get the free version, or pay $35. The only reason to pay $35 is if you were going to extend the visa beyond 30 days.
