Skipping flight
Hypothetically, say I book a BA flight Dublin to Las Vegas out via LHR and back via LGW, and build in an overnight prior to last leg from LHR-DUB so that I can pick up luggage. I then dispense with the Dublin flight, but book a separate BA flight home to Manchester, can I get my bags ticketed to Manchester at LAS if I tell them about the additional ticket? Or am I risking them charging me more?!

If I understand you properly, no never tell BA about any additional tickets.
You want to go DUB-LHR-LAS but return LAS-LGW-DUB?
it might work IF you can get LAS-LHR then an airport change to LGW for the LGW-DUB flight as they would have to give you your luggage to switch airports, just make sure they don't have your FF number on the LGW-MAN flight.
I've done that myself, albeit a number of years ago so things may have changed regarding the luggage.

As long as BA don't know your real plans you can check to dub for the day after (if your ticket is overnight) and collect your bags in London and check in again to man but don't tell them nothing about another ticket.

There's a good chance you'll automatically be offloaded on the MAN flight if your BAEC details are the same as the DUB flight. I'm not saying it will happen, but it might. By giving them your name and details for this reservation, you've already 'told' them!

Say you live in A and want to travel to B. You might find that C-A-B is much cheaper than A-B, so you buy C-A-B. The catch is that you actually have to start your journey in C. It's very widely discussed here on FT...
