Electronic copy of boarding documents
I will be using the following airlines at these airports and i'm planning on just storing the PDF versions of my confirmation emails and/or boarding pass on my Galaxy Note 3 to display. I would like to do my part to save paper!! Do you think I will have any issues at any of these sectors?
I plan to just whisk out my phone and show the security guard and gate agent my boarding pass.
China Southern boarding at LAX and DEL
SpiceJet boarding at DEL
GoAir boarding at GOI
Indigo boarding at BOM
Jet Airways boarding at BLR

You cannot use a mobile boarding pass on a phone in India to progress beyond security, but you CAN use it now (since January 2013) to enter into the terminal. You will then need to go to the airline's OLCI desk and swap it out for a paper boarding pass.

I had no problems recently showing a passbook pass issued by the OTA i used to book an Indigo domestic flight to get into the airport. To be clear - it was basically a copy of the ticket, and not a BP.
I do believe you'll still need to get paper BPs inside the terminal though. Recently, checked in online with both Indigo and Thai (ex-BOM) and no option for a mobile BP.

I tend to try avoiding the "save" paper part when it comes to flying. The more I try to save on paper, the more likely I'll get stopped for trying to fly without the proper documents.
A few weeks ago I was almost denied boarding (UA) because I didn't a printed boarding pass (I had the mobile pass on my phone).

I second that, you are about to fly thousands of miles and waste god knows how many gallons of jet fuel. Five sheets of paper will not make a difference, just be safe, go ahead and print them.

But sometimes my email doesn't dump into my iPhone correctly neither.
