Free stopovers
How does one get free stopovers? I have a sample itinerary on Turkish Airlines, LAX-IST-NBO, so if I wanted a stopover in IST for 2 days how does one go about dealing with it? If I try to search the same route in Kayak as a multi city LAX-IST and then IST-NBO 2 days later I get a fare hundreds of dollars more expensive...

It depends entirely on the rules of the particular fare you have purchased as to whether you are entitled to any stopover at all. When allowed, a stopover might be free, or there might be an additional charge for it.
