iphone on the plane

I have a new iphone, and was wondering if all of the functions work while I'm on the plane?

You will have to put your phone into "Airplane" mode, which turns off the wi-fi features, so no internet, email, gps, etc.

Does the iPhone have an option to leave WiFi on but the GSM chip off? There are a number of planes now offering in-flight connectivity using WiFi and if it is all or nothing then technically one should pursue the nothing approach as phone use (GSM/CDMA) is still prohibited on most of those flights.

You can remove the SIM and the WiFi will still work. I presume this turns off the GSM

It looks like when you put it in airplane mode, it shuts off WiFi as well, but you do have the option of then turning WiFi back on while in airplane mode.

If you go to "Settings," there are individual toggles for Wifi/EDGE/3G

No, GSM phones must be able to make emergency calls even without the SIM card. The GSM radio will still be on in this instance.
