risks of loading apps to jailbreak iPhone
I currently have a version 1 jailbreak iphone (bought from eBay...so I have no idea how to jailbreak it again).
It has been working great for months on T-Molbile.
I want to load some applications to it.
Any risks on doing this? Is it as simple as going through itunes/appstore, paying, and loading the apps?
OT1 are the jailbreak phones G3 working fine? I am thinking of buying the same.
OT2 any must have apps?

Do you have the 2.0 software on it even (with the app store)? If you have the app store you can download apps from that. If you are still on the first generation of software, before the app store, it gets a little trickier as the latest firmware update from Apple can not be unlocked, at least if you have a normal 3G phone. Not sure if it is different for the first gen phones.
Edit: It looks like if you have a first gen iPhone you can upgrade to the latest firmware without any worries in iTunes then run QuickPwn from the iPhone Dev Team (free software you install on your computer) and your phone will be re-jailbroken and unlocked.

I do not see AppStore anywhere in the iPhone
What would I need to do? How risky is it?

The AppStore didn't happen until 2.x firmware and iTunes 7 (?)
Once you jailbreak and unlock, do not accept any offers from iTunes to upgrade your firmware. That will re-lock and jail.
