This post of mine was proven WRONG!
You can turnoff the wireless portion on the new Sidekick2/Hiptop2, but the original mono-Hiptop/Sidekick and the later color Sidekick/Hiptop had no way to shut off the radio. It was always on.

SURE? No. But I have a CSK right in my hand... tell me what to look for. I know my old Sidekick pretty well, and have never seen any "radio off" capability - and have heard discussion about it not being there.

Mmmm, I think I've seen that option to turn off the radio in my Hiptop... I will look for it again and if I find it, I'll post it step by step. Otherwise I'd have to turn it off during the flight. 

How to get there
1. Click on Diamond in main screen
2. Click on Controls
3. Click on Wireless
4. There you should see Wireless Options where it says on or off, allow GPRS Data Roaming.
Hope this helps and is the right one to turn off the radio portion, not the pager!
