How much data do you use?
I currently have a grandfather T-zones unlimited uncapped data plan for $5.99 per month, but may have to move to new plan with 500MB 4G and unlimited 2G.
I rarely blow through the 500MB mark per month, but I am not sure if I'll ever need it later and regret moving plans?
So, how much do you use?

It's not what we use - we are all different, it's what you use!
Most phones have within the settings the ability to check usage, so I would reset it and see how much you use in a set period.
For instance on my iPhone in Settings/General/Usage/Cellular Usage I can see that since 28Nov2012 (my last reset) I have sent 226MB and received 1.7GB
My iPad cellular usage since Aug 2011 is sent over 700MB and received over 10GB.

My Galaxy SIII (VZW 4G LTE) rarely runs more than 400-500 MB/mo, but like others above, it's almost always on wifi (home, office, client offices, public hotspots). But my wifi use is typically 5 - 8 GB/mo. Interesting, when I first got it the SIII was on Ice Cream Sandwich and usage was much higher. Jelly Bean seems to keep usage lower, though I'm not aware of any differences in the way I use it.

I have 2 smart phones and an ipad on a shared 4 GB data plan. At home and work I am on wifi. The most data-intensive thing I do on cellular data is grabbing some podcasts from time to time. Other than that, doing e-mail and light web surfing I have never broke 2.5 GB per month - it's usually just a little over 1 gig for all three devices combined.

1 clear mifi unlimited - I use it for volume - no idea how much but a guess 5gb/month
1 Nexus 7 3g with ATT 3gn plan - 300mb - 3gb depending on travel and interesting sporting events
1 smartphone - 200mb-1gb
I have a couple of Sling boxes so if there's interesting TV (Masters, March Madness---) I can go through the GB's.

I have 4GB of AT&T for phone (Galaxy Note 2) including tethering (paid by employer) and 2GB for an iPad per month(paid by me)
When I travel domestically and a conference or Hotel does not provide free WiFi or the connection is unreliable/slow, I can burn the whole 6GB a month. If I stay at Hilton, Marriott or somewhere with free and decent WiFi, or not traveling then I could leave a lot of data on the table at the end of the month. Since AT&T has turned on LTE in my neighborhood, and its faster than my DSL, I plan to clean out my remaining data at the end of the billing period.
For International use, I usually get a country specific pre-paid SIM.

While in town, home & office/field locations - I'm on mostly ultra-fast fios and/or mirowave links and used to do about 300 MB of mobile data in the Windows Mobile day, nowadays - about 500 or 600 MB of data (that's low for someone on an unlimited but 3G CDMA plan by VZW) which I do minimal to moderate tethering if necessary. I seldom go over 1GB of data unless I'm on the road traveling by car and staying in places with poor WiFi.
Mrs. L has the same identical HTC global smartphone as me, and since she's not a gadget freak, used an average of 30 MB worth of data each month, mostly for reading emails & MMS, with ultra-light browser usage.

I stream music all day at work and when I drive. I also tether my phone to my PS3 when I'm at home. So I can rack up quite a lot of data anywhere from 20 to 30 gigs a month.
I love my T-mobile G1 plan. Unlimited text data and tether for $20 a month.
