Something air-conditioned. 
Try taking a drive down to the Clear Lake/Kemah/Seabrook area. Nice bay views, some decent seafood, and fireworks displays scattered around the area. There's a good one in Kemah at the Kemah "Boardwalk." Other municipalities in the area put on their own fireworks shows as well... You can also tour Space Center Houston if it's open that day, which I think it is.
