Key West has some interesting history. There is a multi part documentary on Hemmingway and Key West features in part. The Hemmingway House is still there. Maritime Museum. If you want to go in October you can always time it for Fantasy Fest which is a spectacle unto itself.

Not sure how much of the east coast of Florida you have seen.

Personally I would suggest Kennedy Space Center for a full day. I love going there and it still amazes me that the rocket ships are not replicas but actually went into space.

Downtown Savanah is nice with a lot of history.

After that it just depends on what you mean by "Carolinas" and what your interests are.

In Key west, the treasure museum. Pepe’s for breakfast, Blue Heaven if you want to brave the line. Captain Tony’s and Parrot for drinks.
Upper Keys, Lorelei’s for spectacular sunsets, Robbie’s to feed the tarpon. Alabama Jacks on the start of the keys.

How many days for this trip?

2 full days is enough for keywest and then 1-2 days for the rest of the keys. More days if you want to do water things. Dry tortugas is a boat tour. There are many places you can snorkel along the keys.

where would the trip ending point be?

In Key West, Blue Heaven is worth it for brunch if you have the time.
