Do all of the miles count on your airline of choice?
If I fly on Delta, but want the miles credited to my Air France account, do any and all bonuses that Delta is offering automatically post to my A.F. account? For example, bonus for booking on-line, etc..

Absolutely not, the bonuses are tied to a specific plan (and say so in their terms). You would get DL bonuses only if crediting to Skymiles (but if AF ever offers bonuses on DL flights you would get those when crediting the DL flight to their plan). Most airlines restrict bonuses to their own flights as well as their own plans.

But many times the bonuses can work in your favor if you're on the right plan. Last time I flew KE I got 2x base miles from DL as an intro promo. Had I been a KE Skypass member, I would have gotten a measley 70% bucket and no bonus base miles. In this case DL was the best place to be!

Korean has been good for me when I've flown last time I flew was last year LAX-MNL.
But now I just realized its impossible to get Delta Skymiles unless you pay for Full Coach or Business/FIist Class tickets. Someone correct me if I'm wrong? Makes it less attractive to fly Korean now.
From the DL website....in small print.
Korean Air: No mileage credit for fares booked in G or N class and B or Q class, effective April 1, 2002
How can you get Skymiles on Korean on lower fares? Seems the only option is to get Korean Skypass miles now, and I just discovered that even on Korean you get only 70% mileage credit for a Q class ticket for example. These are the current webfares on Korean's website and Orbitz.
Check out the Delta Website with the list of partner restrictions.
