Weird data point. I called just now to add a Suite Upgrade Award just in case since its expiring anyway (and to whine a little extra if and when they cancel me). The Hyatt agent called the hotel and the PH said they can't apply it since its not open, but that it will open tomorrow. Anything is possible in this crazy story.
Bonus DP: Their instagram account an hour ago replied to some comments by saying that they will welcome their first guests tomorrow.

Ultimately this means I'm ahead 73K points from the cancelled booking (and I did fully intend to be there, for the record).

I reached out to the hotel via Instagram message over the weekend re opening date.... received a reply last night that "We will be accepting our first guests tomorrow" which is today! Is the crazy ride over????

Since we can apply SUA's now - what's the move on the best suite (speculation... I know).
Seems like you can choose from multiple options, currently (all the way up to the terrace suite). It's hard to visualize what the terrace suites are/where they are. You also lose the plunge pool with that option.

For my money I'm taking the plunge pool suite.

This is what we did. Plunge Pool Partial Ocean View. They are supposed to have other rooms, like Ocean View and Terrace, but it seems as if they haven't been released yet. I wonder if not all of the buildings will be open. Our stay is Feb 28th.

Yesterday morning my wife and I ended up being the first guests to check into the newly opened Park Hyatt Los Cabos. The team at the hotel had a big welcome reception waiting for us in the lobby and we were greeted by the GM.
There is still quite a bit of construction going on but it looks like most of the rooms closer to the pools and water are finished. The ones farther back and the residences still have a ways to go. There is also quite a bit of landscaping work going on throughout the property. It's also worth noting that the spa is not open yet and I believe one of the restaurants is closed as well. They've been partnering with spas at other properties and offered to book us an appointment at The Montage.
Despite this, our first impressions have been good. The service has been extraordinary but we were literally the only guests for the first few hours so I'll be interested to see how it holds up as it fills out more. We were also offered some generous concessions and a few complimentary treats.
We had a lovely day hanging out at Costamar, the beach club and pool down by the water. We had some excellent fish tacos, ceviche, guacamole and cocktails. A few more guests filtered in and the team was very attentive to everyone.
For dinner we went to Costa Madre and the food was exceptional! The grilled octopus is the best I've ever had and the red snapper was great as well. They also have a cocktail menu with some really interesting options that include sotol and raicilla.
Overall, I'm really impressed with the property so far. We had a few miscommunications and stumbling blocks, which is not unexpected given that they just opened, but the staff are really going above and beyond to make things right.
I'll keep things updated as our stay progresses but initial impression is that this is going to be a great property!

I managed to use a Suite certificate to book into their Premier Suite Ocean View With Terrace which was the most expensive non villa room on cash rate. Doesnt say it has a plunge pool but picture showed one, so not sure lol

Any updates on the hotel? Seems like we were all waiting for it to open and now that it is, crickets! 
Saw some stuff on Reddit but not much beyond a few pics on the first day.
We have a stay Dec. 14-17 so will do my best to take as many pictures and share with the forum upon my return. Was able to apply a SUA last week and was upgraded to plunge pool suite with partial ocean view so quite excited now that it's finally open.
