Depends on the T&C's but I've used them eating solo before. I don't recall seeing any that requires two diners just a minimum spend amount.

Some certs require the purchase of two entrées rather than a minimum dollar spend. So unless one person wants to buy two entrées, it would require two people.

I have seen one in the past that indicated it was valid for parties of two or more. Though I haven't seen that on a certificate in over a year.

Actually two entrees works better in some cases. I went with a friend and our two entrees cost about what the value of the certificate was so we had very little extra to pay (vs. the typical $25 certificate when spending $35 or more).

Also, two entrees is not a big deal to me if dining alone - order two and take one home. I did that once.

There's usually a Min food purchase, either in $ or 2 entrees. It would probaby work best if you want to get an extra entree to take home for another meal. Read the restrictions for the restaurants you are interested in, check their menu prices, and see if it will work for you before purchasing the certificate.

I bought 8 of the $40 for $100 gift certificates. Does anyone know if they can be used on Valentine's Day, or are there holiday restrictions?

Varies but there usually are holiday restrictions. Suggest you read the fine print online if it it looks unrestricted still call the restaurant.
