how far out is catering details known

how far out is catering details known
Just a quick question, how far out is catering for an international flight planned? I have a finicky wife who would like to know what she is going
to get to eat on the 1:25pm flight from Syd to LAX on 7 april in business class.
Also, are kids meals ordered in business any large or more extensive then
economy class kids meals? They are picky too

For an idea of the catering in QF Internatonal J Class, click here and then select the "Onboard" tab, then "Dining" from the drop down options...
I've got a Menu here from December 05 (we were in J on QF175, departure @ 12.05pm), but I'd think they may have changed by now...
