BA/AA - MEX-FLR - $693 r/t OR $511 one-way - Premium Economy
In the last week the oneworld premium economy base fares from Mexico have dropped over $50 and you can find roundtrip premium economy flights to many European cities for less than $1k including over the summer / high season. The best deal based on cost per mile flown appears to be flights from Mexico City (MEX) to Florence, Italy (FLR) - $693 roundtrip or $511 one-way.
Google Flights seems to be having trouble generating deeplinks to the BA or AA websites so it's claiming that it can't find booking options for most of these itineraries, but I could find them searching the BA / AA website, so use Google Flights as a guide and search the airline directly to book!
Depart Sun to Wed and return Tue to Sat. There are a few booking windows - April to Early June, Late July to August, Early September to November. Saturday night stay AND minimum of 24 hour stay required. A stopover is a whopping $400!

Weird stuff going on with the times of flights in the examples you posted from AA's website @cruser1 -- they show what make sense only as PM times as AM times in the 24hr format (dep JFK 0630 arr LHR 0655 the next day? That must be an 1830 departure...)
Also can't seem to find the $693 price you show from BA's website anywhere. Seems more like $850-ish as the lowest (but not even showing that for my dates on BA.com...)

The first screenshot is actually the daytime flight to London.
The $693 screenshot was taken just before posting this (I promise I didn't edit a screenshot), but even $850 is quite good for a roundtrip from North America (6.761 cents per mile USD). Go look at how expensive a roundtrip is just over the border from Texas, or anywhere else in the US. Sorry your dates don't work.

Thank you! SkyTeam does have some good prices between Europe and Mexico in both directions, but that's a different alliance, flying business is more than twice the cost of those premium economy tickets and will earn less than 50% more in most airline loyalty programs (or in some cases less than a premium economy ticket - I'm looking at you shady Delta and AF O fares!). The cost per mile earned is much higher with business!
