Air China, LHR-HKG, J class, £1323, short min stay
Various travel agents offering Air China to HKG from as low as £1323 Sample dates Jan 22-25, so circumvents the Saturday stay rule but looks as if you may need to spend 2 nights at the destination.
Unfortunately can't see what class that books into for *A points hounds. Also the timings are a bit rough on the way back as there's no overnight option.
