*ONE* Skipping a flight / reissue
I have a *ONE* paper ticket with a flight I do not want to take. I'm planning on flying the exact itinerary on that ticket except for a single JFK-ORD segment which I need to skip. My current reservation does not contain this flight at all; only the paper ticket does.
I imagine I need to reissue the ticket to get rid of the extra flight, but I wanted to ask if someone has experience to the contrary.
Reissue in this case might be a hassle, as this is an AY-issued 11-month old paper ticket without a full tax breakdown that I'd need to reissue in the US.

Another advantage of paper tickets... I reckon you'll be fine: just tear the coupon out. (I've done this in the past with a two segment mileage run (LHR-IST-LHR IIRC) and it was no problem at all.

I've done this on a paper ticket with an open segment coupon and no reservation. It was fine. Strictly speaking you can't do it as you have to use the coupons in the order they appear, but most of the time no one will pick up on it, especially if you simply tear out the coupon yourself and turn up for the next flight which is reserved.

What would happen if you were to try to re-use those coupons later, although still within the original validity?

I have made such irregular use of coupons in the pst, with full knowledge and agreement of the airline involved; but I consider myself extremely lucky for having had that kind of break (the QF angel who perfomed the deed got a nice present from me).

I haven't felt inclined to try since that is clearly against the rules of the ticket and fairly easy for the check-in person to pick up on. Obviously exceptions happen (as Viajero described) but don't bank on it, and if someone decides to throw the book at you it could get nasty/expensive.

I have done this on occasions with no need to reissue, normally by "asking nicely" at an airport desk; I wouldn't try to use a coupon at a later date though as I think that's asking for trouble
