DFW! I've been there so many times but never set foot out of the airport! In fact, the only Texas city I properly visited? Amarillo, TX.

I had an overnight layover in IAH too once (flying on cheap Int'l UA J fare - same price as AA Y!), but I don't think that counts as visiting.

Other than that, I have connected in PHX countless time too and never exited the airport! I have actually been to Phoenix multiple times, but I always drive instead of flying.

Interesting. I have just checked and the only airport where I have connected with OW but never exited is DOH. I thought there would be many more, but I have visited the area (or rented a car for the last leg of my journey) in all of the rest at least once.

If we include non-OW itineraries we add DTW, but even that one is soon to change.

Of OW hubs, HEL and HKG are the two that pop into my head.

Flew AY on TXL-HEL-JFK-BOS and CX on BOS-HKG-SGN.

LHR. Every time I actually needed to go to London it seemed to be either LGW/LCY or the Eurostar.
Interestingly I always venture out for a walk in DOH and HKG, most of my trips involving them are absurdly long I find it necessary to stretch my legs a little bit.

Interesting how Dallas / Fort Worth keeps coming up. If I was running the local tourist board(s) I would be looking to strike deals between the airlines and local hotel chains to get people to stay a night or two, in order to inject some cash into the local economies. DOH has something already in this area though it's somewhat limited.

It being a dismal foggy morning, I've totted up the scores to date.

29 airports so far, and the top scorers (I'm ignoring the OP's OW caveat) are ...

DOH - 9
CLT - 5
DFW - 5
HEL - 4 ... surely more than that, with B2B TP Runs?

Never exited:

DOH, CLT, PHX, FRA, DEN

Exited once (compared to 20+ transits):

LHR

For me is ORD.

I could not remember how many times I transit in ORD between Michigan and LAX/JFK/DFW during my college times. But during that moment I was flying UA most of time since it is the only airlines serve a daily flight to my college town.

Transited but never exited DOH DXB
After a lot of head scratching I realised I've never actually exited LHR either! If I want to go to London I just take the train and I've never had a long enough layover to make it worth my while going to the city.
Never been to CLT, PHX, GRU. IOM LCY LFW MSP STL
Most of the others I have exited from, DFW, ORD, FRA, HEL, DEN, MIA, LAX, HKG, OSL, JFK SIN PHL MAN ZRH CPH MEM DTW BOS EWR
I feel sure there's somewhere I'm missing... Maybe not a OW hub ATL maybe?

Flying with American Eagle, I presume

For me, DOH, PHL & CLT are transit-only

A Year ago I tried to get out of ORD having a 12 hour transit, but was snowed in ...

... so with that, I have now transited ORD 22 times without ever leaving the airport.
