We're looking at using the Oneworld explore ticket for the following itnerary:
Sydney
Transit via Hong Kong
Bahrain
London
Madrid
South America
Sydeney
Will the transit via Hong Kong make this a 4 sector/continent trip?

Unless they've changed the rules recently... yes, that's a 4 continent. This applies even if you book a single flight number SYD-LHR on QF or BA.
