Endorsability
Let's say I had a RTW coupon on CX from HKG - JFK. If I walked up to QF and said "Can you get me to JFK?" do you think they would send me via SYD? I would rather have experienced opinions, not just guesses. I know according to the rules, another entry into SWP is not allowed, but going to SYD then JFK in First is better than HKG-YVR-JFK in biz!

ONLY if the distance is the same, then you can switch airlines. But then again, you'd be talking about full fares, NUC fare calculations, HIPs, etc.

What you are asking is not called an "endorse," but it is called "re-routing." You do know that what you're asking is not the same as asking for say switching from CX to BA for HKG-LHR, right?
May I kindly ask what exactly is your intention of the re-routing from HKG-(x/YVR)-JFK to HKG-x/SYD-(x/LAX)-JFK?

But of course if he is already in HKG and wants to go to NY via Sydney, it will mean that he intends to add one extra continent to his RTW ticket (if that is what he has).
Yes it will be possible - if you pay for the extra fare for the addition of the extra continent you are travelling. Then you would need to get your ticket reissued and fare recalculated.
If you're traveling from HK to NY in Biz, your fare will be recalculated as Biz from HK to SYD to NY.
