There's a couple of steam train options: Puffing Billy (through the Dandenong Ranges just outside of Melbourne) http://puffingbilly.com.au/en/ , also the Victorian Goldfields Railway http://www.vgr.com.au/homepage.php

A trip out to the goldfields might be of interest - there's an historical recreation 'Sovereign Hill' http://www.sovereignhill.com.au/ (it's an interactive experience... can do an underground mine tour and stuff like that). It's about 90 minutes outside of Melbourne.
