Well, there shouldn't be any reason to be dishonest about what you do when you travel. Besides, you can generally tell the airline employees flying with you as they will engage in more conversation with the FAs.
Passnegers on the other hand should also never consider holding your "captive audience" to tell them about your worst experiences with the airline and if you do ask for their opinions, you may be putting them in a difficult position.
I prefer to ask questions about the airline- new planes, where they are headed, most leg room on a 777, what is on a low-calorie speical meal, etc. This has proved to be more of an invaluable flight experience.
