What are the current most chic, hot restaurants in Chicago at the moment? I'd love some recommendations.

Alinea - so cool it doesn't even have a sign outside. http://www.alinea-restaurant.com/

For the latter, you probably need several weeks lead time and about 5 hours and several hundred dollars for two. They are both very contemporary.

Not a fan of Japonais, have eaten there twice.

Fronterra Grill and Topolobampo are great spots - highly recommend them.

Instead of Japonais, check out Kaze.

Keep in mind no reservations are taken at Frontera. Go early or expect a long wait (well worth it though). You can book ahead for Topolobampo though.
