Couples getaway, but where?

Couples getaway, but where?

My husband and I are in the early stages of planning a last minute trip to Mexico with another couple in late March. I've been tasked with planning the trip, but the number of Mexican destinations are a bit overwhelming. Here's what I'm looking for:

* All-inclusive resort
* Beach front
* Adult only

Easy right? We're in our late 20's and early 30's, and I get the impression that Cancun may be a bit immature for us, but maybe we'll get a great deal since Spring Break will be over. People keep suggesting Cabo. I'm hoping we can spend less than $1,000 per couple for the flight (BWI) and report for 3 or 4 nights. We're drinkers but not in the GirlsGoneWild way.
Any suggestions of destinations or resorts will be greatly appreciated. Meanwhile, I'll be trolling the forums and reading reviews.

check out Puerta Vallarta...great location, various resort options and Delta has had decent flights in the spring.
