If I want to order a Marriott Gift check ($100 for 25k points) can they link it to my reservation or do I actually have to have the paper certificate?
I would like to wait unitl my points hit later this week and then order the certificate, but we leave next week.
Could they acutally send it to the hotel?

Could they acutally send it to the hotel? Probably, but this is risky. Who knows when USMail will arrive?
I order these often, but in the larger 1K increment. It is not the best use of points, but works for me; and as a Plat I get a discount on the point value needed. It certainly may be worth it to you - but 25K for $100 is a very bad "exchange rate". If you are trying to bring your room cost down, this is the only way to do it - but if you are looking at reducing your trip cost, did you look at all of the certs - dinners, spa's etc?
I am one of the worst FT'ers in maximizing point value
- but even for me, 25K is worth far more than $100! YMMV

Back when Marriott had paper certs for all their awards, I had a few situations where I wanted to stay somewhere last minute. In those instances I was able to get Marriott to send the certs directly to the hotel. Also, as a Plat, I was able to get them to expedite the cert shipments without paying any expedite fees. So it may be possible to get Marriott to mail the certs to the hotel in question and even expedite the shipment without any extra costs. Its worth asking about.
With that said, I do agree with sophiegirl in that the 25K point for $100 Marriott Cheque isn't getting the best "cash" value for your points. But I also realize that "cash" value can sometimes be trumpted by "non-cash" value. And just a $100 savings can sometimes help make a good vacation, great.
