Changing numbers on a reservation during the stay
For reasons I shan’t bore you with my upgrade through AMEX to Marriott Gold hasn’t gone through still but my wife’s has. We check in to a hotel tomorrow for a week. If I put it under my wife’s number, can I change it to my number during the stay so I get the points and nights on my account?

It's very likely Amex created a new account in your name that is Gold status. Find that account number and just change it to that number, in your name. You can merge your accounts later.

If you change to your number but not to your name you won't get credit. Also, you'll lose out on Gold point bonus if you change everything to you.
It's very likely Amex created a new account in your name that is Gold status. Find that account number and just change it to that number, in your name. You can merge your accounts later.

In theory what you are trying to do, though with innocent reasons, wouldn't really be allowed - as you are trying to double dip on status benefits (person 1, wife) with points earning (person 2, you). A bit like changing your frequent flier number in the air, or after you've already used the lounge... it may be possible, but can often go wrong/unchanged.
Hence, as mentioned by iknowthings, you could try - but I would be surprised if the hotel allowed. Even if they did, the bigger risk is that they change the Marriott number, but not the name on the reservation, then neither side would earn any points as they don't match.
In this case, frustratingly, you likely need to choose which you want more: The gold benefits/extra points, or the nights on your account. It seems more likely that using your wife's account, with the gold status, would be more beneficial for you as a family (it is easy to transfer points between a household at Marriott when making a points reservation).
Good luck with fixing the AMEX/Marriott status problem in the meantime.

Yep, nothing there. And no way to cancel my current request or get it pushed though. Been many weeks of waiting now. Yet my wife with a supplementary card had her gold upgrade go through in under 24 hours and yet no one from AMEX or Marriott appears to be able to help in anyway.

Well, that's the mystery solved. You can only have 1 Gold status Bonvoy account per Amex Platinum account and you gave it to her.

Sorry, but this is nonsense. Hilton/Marriott/Narional etc. status is for each card (nor for each primary card). 2 cards ... 2 sets of status. Account credits such as 'travel', 'airline', 'Saks' etc. are one per primary card ... everything else doubles up.

yep it doubles. I’d been waiting for mine to go through for two weeks before remembering she could apply. Hers went though in 24 hours. I’m still waiting
