Central France, La Loire?

Sorry for the 2nd question in two days, but this time, I can't
find anything. We will be driving from Paris to Madrid
and are looking for some kind of luxury accommodation on the way there -
could be a unique place for one night to visit some castles of La Loire,
but mostly would love something for a couple of days - in a little quaint village
of Bordeuax area - love French Bordeuax, mostly St Emillion, Medoc, Cahors -
this kind of wines. Could be a similar place related to Armagnac or Cognac.
Really care about luxury, won't stay in an old castle just because it's old,
we are both from Europe and it's not such a big thing for us as it sometimes
is for others. Would hate an old bathroom or an old stinking kitchen.
I guess something like Four Seasons Provence would be great.
Any help will be appreciated.
