Hotel de la Paix is very well regarded.
La residence d'Angkor Wat is one to consider also.

We stayed last week at the Le Meridien Angkor--wonderful. The hotel was just as the pictures show it. It was extremely clean--nice showers and seperate tubs, Heavenly Bed, and the staff were very helpful. The breakfast was a 7 out of ten and the pool was a great place to sit and have a quite moment and cold drink.

Good luck with your search.

Stayed there in September and was very pleased. Hooked me up with a very good guide too.

Here is the "Hideaway Report's" November write up on Vietnam including Residence. Sounds perfect, and so affordable compared to Aman.

I also loved La Residence-get a pool view, top floor.

I enjoyed both this hotel and its excellent restaurant on my visit. A great alternative.

The Amansara is fantastic, but if they are booked I would try Hotel De La Paix

If not Amansara, I'd prefer La Residence too

Hotel de la Paix sometimes cater to large tour groups and can be noisy

Noooooo! Bad choice. Lots of tour buses and in my experience very average food. It is right across the road from Amansara, but could be a world away.

We didn't love Hotel de la Paix. We felt that the service was really aloof. But I seem to be in the minority here.
