I have an eight hour layover at FRA next month. Coming from the US and going to Barcelona. I am a full-time wheelchair user. Am I crazy to think I have time to take the train into Frankfurt for a few hours? How much time do I need to get back through security? Woud two hours be sufficient?

The bigger problem is to get on a train without having to rely on unreliable external help: The long distance ICE trains are not level boarding and you will rely on a lift that is either provided by the station or the train, which are prone to fail or just not show up. The S-Bahn (commuter train) is usually level boarding, except at the FRA airport regional station, where is uses a 20cm lower platform shared with the regional trains. So the only option might to actually get onto the train without external help might be some of the regional trains, but I'm not using them often enough to know what trains are running there, maybe some of the locals can chime in.
And yes, all this is against the EU directive and local law on accessibility requirements, but as Germany can't agree on a single platform height unlike most of its neighbors it probably won't get much better soon.

As the S-Bahn / Regional station is not directly underneath the terminal you'll need to get down from arrivals level to a concourse level then across to the station area then down to the platforms.

As noted by the other reply, the S-Bahn trains are not level with the platform. You would need to position yourself near where the front of the train will stop so the driver can provide you with a ramp at the first set of doors.
The signs indicating the next arriving train indicate how long it will be, how many four-wagon sets it is composed of. One image / set is a short / kurz train, two is a normal train and three is a long / lang train.
If you look above or beside the tracks in the direction of travel you will see signs with a black H on white. These indicate where the front of train should stop and if different length trains have different stopping points they'll be indicated by "H kurz", "H" and "H lang" respectively.
At the front doors the "door open" button should also have an "assistance required" button next to it. But if you are in the right place the driver should have seen you and know you will need help. The wheelchair area inside the train then has an "assistance required" button to use when approaching your destination station.

So in general an hour should be enough to get through security even in a wheelchair assuming you are a quick roller once past security

it's certainly possible but perhaps not easy.

Connecting between to LH fligghts in J. ORD > FRA > HAJ on 10/10 non schengen to schengen. Will have 3h which should give me some time to take a shower.
A) Will there be security between my gates
B) Which one is the best (or only) LH lounge for me to take a shower? I'm Krisflyer Gold but I assume that wouldn't really broaden my choices in the Schenger area.

My wife and I are flying AA DFW-FRA on SWU's and planning to catch a flight (obviously on a separate ticket) to AMS. KLM has a perfect flight which is exactly 3 hours after we are scheduled to land in FRA. We will be arriving in Business class so should be pretty quick off the plane and we don't waste time. The question is, is 3hr enough time for immigration, luggage pickup, check in, and subsequent security. The KLM flight would be business so should have fast track. Thanks in advance.

Delivery of checked bags is highly variable at the moment due to staffing issues.

B) You will have a choice of any Lufhtansa Business and Senator lounges. In Schengen, and particularly for a shower, I would suggest the A26 business lounge (upstairs from gate level)

ORD-FRA-BAH. Arriving in FRA T1 [LH or UA, to be determined], 5 hour layover, departing from FRA T2 on GF. Checked baggage but UA and LH both appear to interline with GF. One ticket.
This connection (T1->T2 airside transfer between two non-Schengen places) does not require going through immigration and thus no Schengen visa is required, right? No issues? Pax has no Schengen visa but would require one to actually enter Schengen (not from a country requiring an airport transit visa though).

It's not secure and T2 security is at the gate anyway.

Looking at a 55 minute Schengen-Schengen connection. Easy, right? However, the inbound will be on a CR9 so a bus arrival.

Arriving on BA from LHR and will be connecting to an LH or Aegean flight on separate ticket. How much time should I allocate for the connection in summer?

You should be fine. Unless, you are delayed and your next flight is not. And this is a significant risk these days. (But this also applies with a finger position.) So questions you should ask yourself: are there more flights to your final destination that day, how important is it for you to get to your final destination in time? Then also check on a flight tracker the delay history of that particular flight and you get a good sense what your risk is.
