For something beyond the girlie shows but view-only (not Red Rooster or Couples Oasis level), I have always found Vegas to be more of a private show kind of town vs. what one might find in Amsterdam (similar to what baccarat_king mentioned/offered for back east). I hear most of the strip clubs are not even full nude. But if you walk around the major casinos at 1 in the morning, there are all these nice girls sitting at bars or slot machines talking on cellphones. From a distance they will look occupied, but when you walk by they will look up, stop talking, and smile.
I am sure any one of them can arrange a little show, either by themselves or with friends just a phone call away!
Seeing all the pros around is an interesting thing to watch regardless of why you are in town. I probably traveled to Vegas 15 times for business or with my wife and never noticed how available adult services are. Visited as part of a road rally a couple years ago (hanging with many high wealth individuals) and saw a whole other side of Vegas - really opened my eyes!

There are the topless places that serve alcohol and there are the full nude places that don't. There's only one with full nudity and alcohol and that's because it's grandfathered in.
As for the girls you are talking about, though--they are about doing, not watching. Of course the ads say "dancer" because prostitution isn't legal here.
