Seoul Hostels
I'm planning to stay at a Hostel actually for the first time ever in Seoul and was curious any suggestions folks had. I was looking at Banana Backpackers which seems to get good reviews but wanted to get some other input from the crew here first.

Only stayed in one hostel so far in Seoul.
I read a LOT about them before I booked mine though. I think its more to do with, what you're looking for in your accomodation. Party atmosphere vs Serene and quiet is one of the main contrasts i've seen from reviews.
I stayed at Fully House. It falls into the latter category. Out of the way, its not in the hongdae area and the style of accomodation was very apartment like. Everything was private rooms. There is a common area, but its on a seperate floor, you don't have have to go through it to your own room so its usually very empty.
Was awesome for what we were looking for though. Room was more than adequate. Super private. no shared showers. Was like living in your own apartment.

Do you know what area you want to stay in Seoul? Banana Backpackers seems to be very close to Insadong area. I have stayed at Hotel Sarangbang, which is literally in the Insadong area. I assure you it is no longer a Sarangbang (love room). Check other visitor's review on hotels.com. I've also had some friends stay in Hongdae area at An Nyoung Guesthouse. Website here. You can read reviews here. They really enjoyed being in the area, and the owner was very helpful and friendly. Even ordering McDs delivery as it is not something they have in the States (the delivery, not McD).

If you value privacy, stay at "motels"/love hotels. Seoul is so expensive compared to the rest of Korea that they tend to be scattered in outlying areas but it's still possible to get good ones adjacent to major subway lines.
Otherwise, for el cheapo accomodations Korean saunas might also be considered. There is for example one close to Seoul Station and downhill at Namdaemun from the Millenium Hilton that is not bad and charges only about double price for overnight guests. Also very popular with local office workers.

I'm looking for a place with single rooms available but the ability to meet other travelers. I'm alright with Insadong and pretty much anywhere on the metro except for Itaewon.

Try also looking at airbnb.com. Some good options there and affordable as well.
