Where did all the A321s go?

I commute on B6 weekly FLL to NYC (usually JFK, sometimes LGA). Last year got used to the nice A321s. They went away over the summer, but I figured they would be back come fall. Now I'm booked out till Feb, and still no A321s on FLL-JFK. Hmmm... where did they go? (They also keep messing with my favored times for flights, forcing me into more LGA use, but that's another topic.)

Lots of flights to Caribbean destinations where frequency is more limited and/or demand is higher.

Just this past Sunday, I counted four (4) A321s on FLL-JFK. About a month or so ago we even saw a mix of E190/A320/A321 on the route. I also saw an E190 doing FLL-LGA which is rare.

Oh!! That's 3 years late? But why? I thought they delivered in late-2015 or 2016?

There are 21 A321s in the fleet today. Four more are coming this year and 10 next year. Of the 10 next year 5 will be Mint (no surprises there; that update is a couple months old now).

No, they are about 6-9 months behind the original released build schedule which implied a Q2-Q3 2017 delivery of the first new engine model of the A320. You may be thinking of the A321 which started delivery already as was discussed above.
