When I lived in Europe I regularly when to the following places for sushi.
PARIS:
Bizan
56 rue sainte Anne
75002 - Paris
AMSTERDAM:
Kaiko
Jekerstraat 114
MILAN:
Endo
Via F. Filizi 8, Via Pisani 13,Milano
All are relatively expensive but all are very good. Working for a Japanese company these are the places where I always went with my Japanese coworkers when we were in these cities.

Slightly OT - but perhaps an opportunity for another thread
Sorry to go slightly OT but I was just looking up the address and some reviews
of my current favourite London Japanese restautant (Saki), which I listed above, when I found this from this week's Daily Mail - (the voice of conservative middle class Britain);
seems it's not just the sushi that is going down well at Saki

I like em and my Japanese boss reccomends them...
1) San Franncisco- Ozumo. Reservations suggested. Good but many would think overpriced. Depends if your paying. Do you want a bargain or good fish?
2) Oakland (Just across the bridge)- Uzen. Very good. Less expensive than Ozumo but not cheap by any standards. You pay for good quality fish.

A small sushi bar/restaurant tucked away in Kaimuki, northeast of Waikiki, Maguro-ya is my favorite Japanese restaurant in Hawaii. Prices are moderate and the sushi is excellent. Lots of Japanese ex-pats fill the sushi counter, so call ahead for reservations.

I ate the best sushi I've ever had outside Japan last week, and am still sufficiently psyched about it that I had to write it up:
Shiraishi, 7 Raffles Ave #03-01 (Ritz-Carlton), ☎ +65-63383788. Noon-2 PM, 6-10 PM. A tiny place in a quiet corner of the hotel, you won't stumble into this intimidatingly Japanese place by accident, but the restaurant's many regulars come here for some of the best and most consistent sushi and sashimi this side of Tokyo. Lunch sets are good value, but ordering à la carte for dinner can be very expensive indeed. For connoisseurs. Lunch $30-85, dinner $100-200.
I went for lunch with a friend, and we tested the edomae set and their chirashi-zushi. Both were an order of magnitude better than anything I've had in Singapore before, with very fresh fish and perfect rice, and at S$30+++ each (plus S$3 otoshi) they were decently priced too. I've heard horror stories of people racking up S$400 bills if they get carried away in the evenings though, so caveat emptor.

i haven't read anything good about Bar Masa. the whole point of Masa is the overall experience, which is absent at Bar Masa.
