Out of curiosity — do you think yakiniku is the best way to get a sense for what makes wagyu special, or is something else (e.g., teppan) a better way to experience it? I'd kind of like to experience good beef from one of the famous regions on our next trip but have had a bit of indecision fatigue on the best format — and Tabelog won't help much with picking a category!

I've had both, and i loved the Teppen experience, having a personal chef and seeing his methods was a great experience.. but the yakiniku place was all you can eat and the food was outstanding. As long as you don't overcook it, it was a great way to eat wagyu imho.
