It's much easier than you think, don't worry.
- bring a lot of activities, especially for the 2 year old.
- approach the gate agent early on and see about seating. usually they are pretty helpful and will help ensure you are all together, etc.
- when I fly long-haul with my 7 year old, he gets lots and lots of screen time. he loves it! The iPad is your friend
- bring a few ziploc bags, some wet wipes. and a complete change of clothes. a fidgety 2 year old usually results in a sticky mess at some point
- make both kids use the bathroom at every opportunity
Don't worry! I fly long hauls for 30 years and on every flight there are lots of kids - it's incredibly rare that anything really bad happens. Eventually, they all fall asleep.

Friends swear by a tablet filled with their children's favourite shows and puzzles/games etc.

You're already being proactive which is a good sign for your family and fellow passengers. The 2 year old is probably more likely to have a issue with the duration and getting bored so plan ahead with books, coloring, iPads/entertainments. For me it was Legos my parents should have bought stock in it with how many they purchased me but it kept me quiet and distracted.
Try to get seating together. In Y some families do the row of 3 with the other parents across the aisle. Others do groups of 2 seated behind each other. Some alternate which parent sits with which child for awhile or the whole flight.
Board early to get the children settled in and stuff packed away.
