Victoria Peak will be all clear and OK to visit 7 days a week.
Nathan Road and Ladies Market should be fine during weekdays, but starting Fri night to Sun night, best to check latest updates to see if there are any demonstrations in the area. Unfortunately, really cannot say for sure until the day of.

Am I correct in thinking that protests are on Saturdays and Sundays and the rest of the week is business as usual in HK? So easy to fly in and out then and move around the city?

Also live in HK, and also think it's as great a city as usual.
My biggest negative impact from the protests is how it's bringing down the mood of some close friends who now feel like they want to get out of HK.

I arrived in HK last night and except for it being quieter (this being my 6th visit) and some graffiti there's nothing going on.
My original Xiamen Air flight got cancelled (LAX-XMN-HKG) so rebooked on direct SFO-HKG flight in Business on Hong Kong Airlines for $1700 R/T last week. Staying at the Mira for about 1100 HKD a night, a bargain.

It just never really got off the ground for some reason. I think most protesters have come to the conclusion that targetting the airport any more would be counter-productive.
Today's (approved) march and rally is from Kwai Tsing to Tsuen Wan, so that's unlikely to affect many visitors.
