I think many people DO tip in cash so they can facilitate both. Service industry workers certainly do not make a lot of money and when given exceptional service, many people prefer to see their money go directly to the provider.

I got a snack and a drink. The tip was 90 cents. I can live with that for an $81 RT ticket.
