The Beaujolais (Dijon to North of Lyon) has, IMHO, it all. Beautiful villages, history, great restaurants and great wine. But, it is really more of a weekend from Paris--unless you take the TGV.

Champagne is nice, but, I much prefer the Beaujolais. Stay out in the country. Maybe here: http://www.chateau-pizay.com/
