Cars are not cheap to rent but they will make your life so much more comfortable! You can explore the island on your own, trying to do it using the public transportation or the gazillion motorbikes available is just way too much hassle! Did my honeymoon there about 15 years ago and had visited once even before then. To make it really special you should rent a car...if u rent a motorbike you are pretty much a fair target out on those streets!
Not sure if the crepe place at the main square is still there, it is located at the corner with the street going downhill...They make the best chocolate crepe with nuts on the planet! If it's still there, please have one for me:-)
Some months ago a big cruise ship sank off the port there...maybe they have scubadiving excursions to it, forget horse back riding

We just got back from a week on Santorini and we stayed at Artemis Villas in Imigrouvigli.. I would recommend it as a place to stay, it was quite lovely. Great pool area and unbelievable views. Plus it is on the quieter part of the island, between Fira and Oia.
