Customs export stamp at AMS
Normally I fly from FRA or DUS.
There I check in and let them return the bags to me for customs. At FRA I need to leave them at customs and they send them to the plane, at DUS I get the stamps from customs and then bring the bags to the oversized baggage drop point.
How does that work at AMS? Where are the bags left, dropped after customs examination?

Not sure about the current situation but the customs office was on the left side of the KLM departure hall (which is to the left of that for other European carriers) as you are looking at the terminal from the drop off area.. I just don't remember what one does with the bags.
Just be aware that if you are seeking to get cash back on the other side, the lines can get pretty long. Last time I did it, I was only getting EUR 5 back while the mainland Chinese tourists in line were getting what were 100s of Euros.

Yes the lines at Global Blue can be crazy and I always get a high multiple of 5 Euros. That is why I never ask for cash back but mail the stamped receipts to the vendor who refunds me the vat to my German bank account (Lacking that, payment via paypal would make a refund easy) In some cases where they know me I don't pay it in the first place.
