The "stoneheads" are in the southeastern part near Syria. In Istanbul along the blue line streetcars there are travel companies that conduct tours. You'll find several near Sultanahmet Square. I picked up a brochure last week in Istanbul: walkabout.com.tr., Walkabout Travel, Alemdar Cadessi, No. 3/B Sultanahmet, Istanbul.
Note: I have no experience with this company and they're not the only ones that could give you a tour.
Can experienced people chime in here about touring Anatolia? I'd like to do Ist. and Anatolia (including the heads) on my next visit. Istanbul was awesome.

Well I did this on my own in 2010, combining bus, train and LCC (Pegasus) but I travelled westward from Urfa. From Istanbul I'd fly or bus to Adiyaman. Shared taxi or bus to Kahta and hire driver to get up to Nemrut. Kahta is the usual base to stay for a visit or extra hiking in the area, though I did it all in a crazy day traveling from a Kurdish village near the border across the Euphrates up to Nemrut then bussed straight to Cappadocia. did this in 2005 out of Kahta, which is definitely the base for the region, I think from there we took a minibus to Gaziantep, and onwards into Syria.

Aren't there tour companies that operate locally giving tours? I figured there are tour companies at the airport and tourist centers when in Cappodocia. They must be cheaper than booking from out of the country.
