Is there a simple way of discovering, via the EY website or elsewhere, which routes/flight numbers London to Australia and back offer F or is it simply a matter of trial and error through the booking process?

All the 3 LHR services, as well as the SYD/MEL flights have F (MAN is 2 class J/Y, while VA's operated EY6450 to SYD is 3 class J/Y+/Y).

The ey flight via sin to be should be two class as well

Though by the end of the year, one of the LHR flights will have the new A380 F product.
