If you are a national of Indian subcontinent (India, Pakistan, SriLanka, Bangladesh etc), China or any African country, its not a good idea to seek visa thru EK after you have arrived at DXB. Even if you manage to get one, it would take minimum 2-3 hours (my own personal experience). Plus you may get lot of attitude which could spoil your day.
With some effort you can pass those 8 hours at DXB. Remember, laptop + internet can give you nirvana anywhere. (DXB has free WiFi)
