You can of course change your class of travel at the airport by paying change fees and the fare difference.
If you are asking about whether there are cash upgrade offers which might be cheaper than doing a ticket change, then it happens at some outstations more than others. ex-USA is where I've seen it more often, but I would not count on it being offered if you have to travel in the higher class.
