DXB layover during night

DXB layover during night
We are flying out to Penang from Manchester over Christmas and flying first time ever with Emirates - unfortunately only Economy.
On our return journey we land at DXB @ 22.30 but don't leave until 03.00 - will there be anything open or because these night flights are common will it be operations as normal. Just thinking of looking to get a quick bite to eat or do a bit of shopping, or is there any decent lounges worth us 'buying' into?

As noted above, the sun never sets on T3...
In DXB T3 there is the Marhaba lounge, to which you can buy into (or free with some credit cards, but it's a very specific list, or Priority Pass). Admission is $48/person otherwise. It's OK - free wifi, light bites, drinks. Not sure if it's worth $48 given the other options in DXB.

That time of evening/night is one of the peaks in passenger travel. It will be like a Saturday shopping in Manchester city centre... busy, busy. Lots of shopping opportunities and places to eat. You certainly won't be stuck for things to do.

3.5 hrs in DXB will be fine IMHO.. lots of opportunities to shop , splurge etc..and from my experience in DXB, the duty free prices are very competitive in many items.. specially if compared to Europe..
