Changing a return saver reward???

Hi all
My points are expiring at the end of this month. I know I've really left it to the last minute!!!
I've got enough points for a return saver reward from Auckland to Melbourne, but the only flights available with this reward are over the next couple of weeks and I won't be able to get the leave off work until next year. I haven't got enough points for a return flex reward. Do I have any options?
I know that you can pay ($50US?) to change the dates of a return saver reward but does the new date have to be available at the time of changing, or can I leave it 'open' until a return saver reward flight becomes available on a convenient date next year?
Appreciate any help or tips ....
Also, does anyone know how you go about getting credit for miles that aren't showing in your account? My husband has more points than I do yet we've taken the same flights so it seems I may have some owing to me. It would have been from over a year ago though so I may have left it too late.
